MIRI, Aug 25: The upcoming Culinary Demo and Dialogue programme on Aug 26 will offer participants not only the opportunity to delve into the art of ‘kasam’ (fermented food) but it will also provide an experience that will open doors to understanding the diverse community that stands behind Sarawak’s unique culinary heritage.
Organised by MYY Living Arts (MYYLA) and The Tuyang Initiative, in partnership with Yayasan Perpaduan Sarawak (YPS), this event will be held at WAT Academy Miri.
During this enriching one-day event, participants will have the unique opportunity to delve into the fascinating world of Sarawak’s culinary heritage by learning the intricacies of crafting three beloved fermented dishes: ‘kasam pucuk ubi’ (fermented tapioca leaves), ‘kasam sawi pahit’ (fermented bitter mustard leaves or ensabi), and ‘kasam ikan sultan’ (fermented sultan fish).
According to a media release, the sessions to be led by an accomplished local culinary enthusiast and educator at WAT Academy, Rebekah Reenay, will feature a truly immersive and educational traditional culinary experience.
Commenting on this collaboration, MYYLA executive producer and co-founder of The Tuyang Initiative Juvita Tatan Wan expressed food’s profound role in uniting people.
She emphasised that exploring cherished cuisines like ‘kasam’ not only brings individuals closer but also invites a deeper understanding and appreciation of similarities in our various cultures.
“Learning about traditional dishes like kasam goes beyond the kitchen; it opens doors to understanding the people and community behind the dish.
“Fermentation is a technique that exists in many cultures globally. By bringing to light differing versions from our various communities in Sarawak and Borneo, we hope that it will provide a different glimpse into our people and unique environments,” she shared.
Through the Culinary Demo and Dialogue sessions, Juvita emphasised that the chances of exchanging recipes and culinary stories are the key to appreciating diversity.
“The sessions are not merely about preparing dishes; we’re hoping to forge stronger connections with one another. These moments of shared laughter and culinary camaraderie build bridges of shared experience, ultimately nurturing a harmonious coexistence while embracing our unique identities,” she added.
The Culinary Demo and Dialogue Initiative is a year-long endeavour that celebrates the rich tapestry of Sarawak’s culinary landscape.
By enabling participants and instructors to engage in a delightful knowledge exchange, the programme showcases both well-loved and uniquely Sarawakian dishes.
