The competition, which featured many renowned international chefs, saw the team excel in the ‘Practical Hot Cooking: 3-in-1 Chinese Style Assorted Dishes’ category.

The dish titled “Triple ‘R’ Seafood Platter – The Flavors of Sarawak!” prepared by Rock Road Seafood Restaurant at the 3rd Global Culinary Challenge Malaysia 2024 held at Malaysia International Trade and Exhibition Centre (MITEC) in Kuala Lumpur.

During the competition, the team prepared a dish called ‘Triple ‘R’ Seafood Platter – The Flavors of Sarawak!’.

Representing Sarawak’s rich culinary heritage, the dish featured three premium seafood preparations, each offering a unique taste profile, namely ‘Deep Fried Prawn Fritters with Red Crispy Grain and Sarawak Laksa Mayo’ (red), ‘Snapper Fish Roulade with Sour Brinjal (Terung Dayak) Sauce’ (yellow), and ‘Pan-Fried Fresh Scallop with Sarawak Black Pepper Gula Apong Sauce’ (black).

“The dish is beautifully garnished with blanched wild ferns known as ‘Midin’ and thinly sliced red radishes, artistically arranged on the plate.

“Additionally, a touch of the chef’s special blended chilli sauce enhances both the visual appeal and the flavour profile.

“This tri-colour presentation not only celebrates the vibrant culinary traditions of Sarawak but also symbolises the colours of the Sarawak flag, making the team and the community proud to be Sarawakian,” the statement said. — DayakDaily
